Celiac Disease and Gluten Sensitivity

Breads and cereals are an important source of daily nutrition for many people around the world. But for people with celiac disease, they can also be a source of discomfort.  They can also set the body up for many other problems related to an immune system out of wack.

Celiac disease is a common autoimmune disorder that affects more than 2 million Americans.  It is also known a celiac sprue disease, nontropical sprue, or gluten-sensitive enteropathy.  No one knows the exact cause of celiac disease, although genetics may be involved. (According to the National Institutes of Health, celiac disease affects 1 in 133 Americans.  For those with a family history of the disease, the chances of developing it increase to 1 in 22.)  The Celiac Disease Foundation estimates that 97% of all cases of celiac disease are undiagnosed.

Celiac disease is activated by consuming the gluten proteins found in grains such as wheat, rye, barley, and possibly oats.  In childrean, the symptoms are primarily gastrointestinal.  In adults, other body systems are commonly affected as well.  Some of the common symptoms of celiac disease include:  

  • Recurring bloating, gas, or abdominal pain
  • Chronic diarrhea or constipation (or both)
  • Bone or joint pain
  • Anemia
  • Weight loss
  • Fatigue, weakness, or lack of energy

What is celiac disease?

Celiac disease affects the villi (tiny, finger-like projections) that line the wall of the small intestine.  The small intestine wall is the place that your body absorbs nutrients from digested food.  When the villi are damaged, the body is unable to absorb important nutrients needed for health, a condition called malabsorption.  If allowed to progress, this can eventually lead to a wide range of health problems, including malnutrition, vitamin and mineral deficiencies, loss of bone density, and damage to the nervous system, liver, and other vital organs.  Without nutrients, the body can't function right or repair damage to tissues.

What can you do? If you suspect that you have celiac disease, it's important to tell your health care provider.  Several tests are available that can accurately diagnose this condition.

Our office has the most advanced tests available that are more sensitive and comprehensive than any others used by mainstream medicine.  Ours can test for 16 components that may be involved in your allergic reactions: standard tests commonly only test for two (in U.S.) or four (in Europe) markers for wheat and gluten reactions.  We also have an accurate test for cross-reactivity between antibodies for wheat and other foods, like coffee, chocolate, and avocado.

We can also test for leaky gut (intestinal barrier permeability) without the necessity for surgery. Wheat and gluten sensitivities lead to leaky gut syndrome and other more serious autoimmune disorders.

 Your symptoms can be greatly alleviated by switching to a gluten-free diet.  By eliminating gluten-containing foods such as wheat, barley, rye, and possibly oats, you'll give your body the chance to heal and recover.

My name is Dr. Jay Sordean, and I’m a wellness consultant, professional acupuncturist, herbalist, nutritional therapist, and homeopath. I’ve studied with the top teachers in all of these fields over the past 30 years, and I continue to learn and study.

I conduct lectures and seminars on many health topics in the local community; in the past I’ve also taught advanced courses in Japanese acupuncture and immune enhancement to other acupuncturists and healers. My training has spanned the globe. Because I read, write, and speak Japanese as my second language, important parts of my study were done with Masters from Japan.

My homeopathy and naturopathic training has been with masters from all over the world over the past 30 years as well, including Japan, India, Canada, and Europe. In 1983 I was licensed in acupuncture in California; I also have an acupuncture license in Indiana where I was born.

I have had national acupuncture certification in the U.S. since 1985. My qualifications include specialty training and evaluating work injuries – I am one of a very small number of California acupuncturists who is a Qualified Medical Evaluator (QME) for the state. "February 17,2009 :   I was referred to the Redwood Clinic by my Back Care Doctor for acupuncture because of the pain that I have had from Scoliosis (a curvature of the spine). I cannot take any kind of pain medication because of allergies to the great majority of such pills and also because I do not like the side effect that they cause.
         In addition I also have a bilateral
Trochanteric Bursitis (Bursas are the fat pads which protect the hip bone) which is also caused by the posture I have when walking due to the Scoliosis.
I had received two treatments with Dr. Sordean and when I went for my 30 minute walk the following day and I was pain free. Usually when I walk I have severe pain the full length of my back, so severe that  it  would make me cry. I can now walk with some pain, but it is tolerable.
        I have gotten two additional benefits from acupuncture. The first one is that I can now taste and smell. For about ten years I could not taste nor smell due to a chronic sinus condition. I have had to use a medication spray that is cortisone based, which also has some bad side effects. I decided to start decreasing the use of the
nasal spray after! started acupuncture. Before! realized it, I could smell and taste without the use of any medication. It has been at least two months and so far I can still smell and taste.
        The other benefit is that I can sleep through the night until morning without waking up with pain. I wake up rested and energetic. Before I would wake up several times during the night and had to get ice packs to put on my back and hips to relieve the pain so that! could sleep. As a result I would get up tired and totally worn out.
         Dr. Sordean is highly profession and competent and I would recommend him to anyone who is having pain. I know that I cannot be cured of my Scoliosis, but I can be pain free.    Sincerely,   A  very happy patient!"
